Roasted Apricots with Walnuts and Honey


INGREDIENTS

  • 6 ripe apricots, halved and pitted

  • 2 tablespoons unsalted butter, melted

  • 2 tablespoons honey (plus more for drizzling)

  • 1/2 teaspoon ground cinnamon (optional)

  • 1/4 cup Mariani chopped walnuts

  • Pinch of flaky sea salt (optional)

  • 1 teaspoon thyme leaves, for garnish (optional)

  • Vanilla ice cream, Greek yogurt, or whipped cream, for serving

INSTRUCTIONS

  1. Preheat the oven to 400°F.

  2. Place the halved apricots cut side up in a baking dish.

  3. In a small bowl, mix the melted butter, honey, and cinnamon (if using). Spoon or brush this mixture over the apricot halves.

  4. Bake for 15–20 minutes, or until the apricots are tender and just starting to caramelize around the edges.

  5. Remove from the oven, sprinkle the chopped walnuts over the apricots, and return to the oven for another 5 minutes to lightly toast the nuts.

  6. Let cool slightly, then drizzle with some extra honey.  Sprinkle on flaky salt and thyme if desired.

  7. Serve warm with a dollop of Greek yogurt, whipped cream, or mascarpone.
