Pear Brown Butter Walnut Baked Oatmeal
INGREDIENTS
¼ cup unsalted butter
3 eggs, room temperature
¼ cup maple syrup
1 ½ cups unsweetened almond milk (or milk of choice), room temperature
1 teaspoon vanilla extract
2 cups old-fashioned rolled oats
1 teaspoon ground cinnamon
1 teaspoon baking powder
¼ teaspoon salt
1 Bartlett pear, diced
1 Bartlett pear, thinly sliced
½ cup Mariani Walnuts
INSTRUCTIONS
Preheat the oven to 350°F. Grease a 9×9 inch baking dish.
Brown the butter. Melt the butter in a small saucepan over medium heat. Once melted, continue cooking, stirring occasionally, as it foams and then turns golden with brown specks forming on the bottom. When the color is deep amber, remove it from the heat. Let it cool slightly before using.
In a large bowl, whisk together the butter, eggs, maple syrup, almond milk, and vanilla extract.
Add the oats, cinnamon, baking powder, and salt. Stir until combined, then fold in the diced pears and the chopped walnuts.
Pour the mixture into the prepared baking pan and smooth the top. Arrange the pear slices over the oats.
Bake for 40-45 minutes, or until the edges are golden brown and the center is set. Let it cool for 10 minutes before slicing and serving.
