Maple Roasted Carrots with Slivered Almonds


INGREDIENTS

  • 2 lbs medium carrots, peeled and cut in half lengthwise

  • 3 tablespoons olive oil

  • 2 tablespoons maple syrup

  • ½ teaspoon ground coriander

  • Salt and pepper, to taste

  • ¼ cup Mariani Slivered Almonds

  • 1 cup cooked farro or grain of your choice, for serving

  • 3 tablespoons pomegranate seeds (optional)

  • Fresh herbs, for garnish (optional)


INSTRUCTIONS:

  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

  2. Place the carrots in a large mixing bowl. Drizzle on the olive oil and maple syrup and toss until the carrots are evenly coated. Sprinkle on the coriander, salt and pepper and toss again.

  3. Place the carrots on the baking sheet and bake for 25 minutes.

  4. While the carrots are baking, toast the almonds. Place the almonds on a small skillet over medium heat. Sauté for 3-5 minutes, until lightly browned. Remove from heat.

  5. Plate the carrots over grains of your choice. Top with toasted almonds, pomegranate seeds, and herbs.
