Whipped Ricotta and Walnut Toast


INGREDIENTS

  • ⅓ cup Mariani Chopped Walnuts

  • 8 slices of crusty bread (such as sourdough or ciabatta)

  • 16 oz. ricotta cheese

  • ¼ cup extra virgin olive oil

  • 3 tablespoons honey, divided

  • Salt and pepper, to taste

  • 2 tablespoons fresh thyme leaves

  • Optional: 2 teaspoons crushed red pepper flakes


INSTRUCTIONS:

  1. Toast the walnuts. Place the walnuts in a small skillet over medium heat. Toss over heat for 3-4 minutes, until fragrant.

  2. Add the ricotta cheese, olive oil, one tablespoon of honey, salt, and pepper to a food processor. Blend for 15-30 seconds, until completely smooth.

  3. Toast the bread.

  4. Spread a thick layer of whipped ricotta on each slice of bread. Drizzle the remaining two tablespoons of honey on top. Top with the toasted walnuts, thyme, and red pepper flakes (if using).
