Scalloped Sweet Potatoes


INGREDIENTS

  • 2 large sweet potatoes

  • 1 cup heavy cream

  • 1 TBS cinnamon

  • 1C walnuts

  • 1/2C brown sugar

  • 1/4 Cup melted butter


INSTRUCTIONS:

  1. Preheat the oven to 375 degrees.

  2. Peel and thinly slice the sweet potatoes.

  3. Place the sweet potatoes in a large bowl and pour the heavy cream over top. Mix the sweet potatoes and cream to coat the potatoes.

  4. Add the cinnamon and mix to coat.

  5. Place the sweet potatoes in the bottom of a baking pan.

  6. In a small bowl, mix together the walnuts, brown sugar and melted butter.

  7. Add the walnut mixture on top of the potatoes.

  8. Place the baking pan in the oven and bake for 45 minutes at 375 or until the potatoes are soft and cooked through.
