Banana Walnut Pancakes


INGREDIENTS

  • 1 cup all-purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon cinnamon

  • 2 tablespoons granulated sugar

  • 2 large, overripe bananas, mashed

  • 1 large egg

  • 1 cup milk

  • 2 tablespoons butter, melted (plus some for greasing the pan)

  • ¾ cup Mariani Chopped Walnuts


INSTRUCTIONS:

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, and sugar. Set aside.

  2. In a separate bowl, combine the mashed bananas, egg, milk, and melted butter. Whisk until evenly combined.

  3. Add the wet ingredients to the dry ingredients and mix until combined. Fold in the chopped walnuts.

  4. Bring a medium frying pan to medium heat and grease with butter. Spoon about ⅓ cup of batter onto the pan. Cook for 2 minutes on each side, until golden-brown. Repeat until you have used up all of the batter.
