Citrus Salad


INGREDIENTS

For the Salad:

  • 4 cups arugula

  • 1 large grapefruit, sliced

  • 2 blood oranges, sliced

  • 2 navel oranges, sliced

  • ⅓ cup fresh mint leaves, torn

  • ¼ cup Mariani Slivered Almonds

For the Dressing:

  • Juice of one lemon

  • ¼ cup extra virgin olive oil

  • 1 teaspoon Dijon Mustard

  • 1 teaspoon honey

  • ¼ cup garlic powder

  • Salt and pepper, to taste


INSTRUCTIONS:

  1. Make the dressing. Add all of the dressing ingredients to a small bowl and mix to combine.

  2. Add the arugula, grapefruit, oranges, and blood oranges to a large bowl. Pour the dressing on top and toss to coat.

  3. Sprinkle the mint leaves and slivered almonds on top.
